Amy’s Chicken Spinach Quiche

 
 

The warmth and fluffiness of a well-crafted quiche filled with healthy and deliciously-tasting ingredients. The quiche has its roots in both German and French cuisine.

There's a certain nostalgia in the simplicity of a well-crafted quiche capable of turning an ordinary meal into an extraordinary culinary delight. This is an easy-to-follow recipe.

Ingredients

1 cup shredded cheddar cheese, divided

1 (9 inch) unbaked pastry shell

1 cup diced cooked chicken

1/2 (10 oz) package frozen chopped spinach, thawed and squeezed dry (or use fresh)

1/4 cup finely chopped onion

2 eggs

3/4 cup milk

3/4 cup mayonnaise

1/4 teaspoon salt

1/8 teaspoon pepper

Yield: 6

Directions

Sprinkle 1/4 cup cheese into pastry shell. Combine chicken, 1/2 cup spinach, onions, and remaining cheese in a bowl. (You can save the remaining spinach for another use or use a desired amount of fresh chopped spinach.)

Spoon mixture into pastry shell. Whisk the eggs, milk, mayonnaise, salt, and pepper in a bowl. Pour over the chicken mixture.

Bake at 350 º for 40-45 minutes or until a knife inserted near the center comes out clean. Let it rest for 15 minutes before cutting.
